Here is a simple, easy, delicious recipe for Reuben Casserole using things that have been on sale this past few weeks....
6 slices rye bread cubed
1 can 16oz. sauerkraut drained and rinsed
1 lb. corned beef (I bought last week at Publix...it only goes on sale 1 time a year!! I stock up...I cooked some for corned beef and cabbage....saved leftovers for this)
3/4 c. 1,000 island dressing
2 c shredded Swiss
1/2 tsp. caraway seeds (optional)
Preheat oven to 400
Grease 9x13 casserole pan, place bread cubes in bottom, then layer sauerkraut,then beef...Pour dressing over all...spray foil with Pam (yes spray the foil...cover with the Pam side toward the food) bake 20min....remove cover add cheese bake UNCOVERED 10 min.
This is fabulous!!!
